The rotten banana problem is well known here at my blog. If you have the time check out my banana tag (here) and you will find out that most of the recipes were made in order not to through away my over matured bananas.
These days I am taking it to the extreme: my ultimate goal is not to through away any food (expired, rotten, over matured, etc.). The first thing I do is to make grocery lists in order to control my shopping. The other thing is to regularly check my cabinets and the condition of my food stock, especially the fresh one. As soon as I see a banana that is flirting with my garbage can, I take it and move it as it is to the fridge. This way I definitely give it an extra one to two extra days of life. And then I make something of it: cupcakes, beverages or whatever I am in the mood in. This time the matured banana made my Saturday breakfast. Did I mention the recipe has no added sugar?? Yield: 2 regular glasses
- 1 (95gr) sliced banana
- 1 large tbs (53gr) smooth peanutbutter
- 1 cup (216gr) milk
- 1 tbs. (7gr) maple syrup
- 1 cup (120gr) crashed ice
- Place all ingredients in the blender or food processor
- Run the processor until all ingredients are well blend
- Serve immediately
