This recipe came up after a friend’s phone call who ended as: hey I only have shrimps, coconut milk and noodles which are due soon, could you please post a recipe with these ingredients to help me use the noodles? Oh what a great idea!! Someone giving me the ingredients and me coming up with a recipe !! I went for it and here it comes:
Shripms & Coconut Milk Noodles

Ingredients
- 250gr defrosted and peeled shrimps (used some precooked)
- 1 can coconut milk (250 ml)
- 250 gr vegan flat noodles
- 2 tbs olive oil (used a lemon infused one) .
- sea salt
- 1 tsp cornflour
Instructions
- In a medium sized pot fill up (3/4) with water and let it boil.
- In a frying pan pour the olive oil and cook the shrimps until they get a nice golden color.
- Add the coconut oil and lower the temperature.
- Add salt.
- In a glass pour some water and stir in the cornflour
- Add the mixture to the sauce and stir until it thickens. Turn off the stove.
- Boil the noodles in salty water according to package instructions.
- Strain them and add them to the coconut sauce.
- Stir and serve.
Notes
If you do not have lemon infused lemon, pour to the shrimps the juice of a small lime just before the coconut milk.
You may use egg noodles as well.
